14. B vitamins and the Philippines πŸ‡΅πŸ‡­

Rice is a plant with small grain, but with great possibilities, food with a very long history and the most important food culture in the world. A Filipino proverb says: “Be like a rice plant, the more grains it produces, the lower it bows.” Rice contains B-complex vitamins. B-complex vitamins participate in chemical reactions such as the transfer of electrons and chemical groups. Vitamin B1 participates in CO2 elimination reactions from the body, vitamins B2 and B3 in redox reactions, vitamin B5 in the transfer of acyl groups with one c-atom, and vitamin B6 plays a role in the metabolism of amino acids. Vitamin deficiency can lead to disease, and to ensure needed vitamin B intake, let’s go back to the Philippines and a delicacy called Filipino rice cake.It is made from rice, coconut milk, sugar with a little salt and vanilla extract.
